Healthy recipes with Magdalena – Pomegranate and mint salsa dip

Ingredients:
• 2 pomegranates
• 2 jalapenos or other chillies of your choice – finely chopped
• 10 spring onions, finely chopped
• 2 tbsp extra virgin olive oil
• 15g fresh mint, finely chopped
• 15g fresh parsley, finely chopped
• 1 lime

How to make it:
1. De-seed a pomegranate and transfer the seeds to a large salad bowl.
2. Mix in mint, chillies, parsley, onions, oil and lime.
3. Serve as a side salad with roast chicken or as a salsa dip.
